About Tojiro knives
Where are Tojiro knives made? In Tsubame-Sanjo, Japan, since 1953. This is their story.
One roof, three generations
Tojiro was founded in 1953 in Tsubame-Sanjo, a metalworking district in Niigata, Japan. The region had shaped steel for centuries before the Fujita family set up their workshop, and the craft was already in the air.
The company has stayed in the same place and in the same family since. That matters, because making a good knife is not one skill. It is a chain of them: forging, hardening, grinding, sharpening, fitting the handle. Keeping every step under one roof is how the knives stay consistent, year after year.
What began as a maker of scissors and kitchen blades now covers the Classic, Classic Damascus, ZEN and PRO ranges, plus the RepPU and Sakuya flagship lines. The shape of the range changed, the standard did not.
Heritage
The Fujita family opens a workshop in Tsubame-Sanjo, Niigata, a region built on metalwork.
Continuous knife making under one roof, generation after generation.
A super steel core with high edge retention, clad for easy care.
Rockwell hardness on the Classic range, for edges that hold.
Honest steel, honest price
A knife should not be a status object. It should cut well, keep its edge, and cost what it is worth. That belief has guided Tojiro since the first blade left the shop in 1953, and it is why cooks around the world know the name.
